Around forty. Below that a single deck works; above it, people end up standing in each other's way unless there is a second level.

Is catering cooked on board?

On the largest boats, yes — they have a full galley, so food is cooked and served in courses rather than delivered cold and reheated.

How much notice do the big boats need?

A month for the 110 ft and 120 ft. They have longer crew and provisioning lead times than the rest of the fleet.

Is a licence or any paperwork needed?

No. You are a guest on a crewed boat — the captain holds the licence and the operator holds the permits.
